The Ultimate Detox Dinner

Prawn and Green Curry

This is an easy and delicious recipe that can be ready in just 30 minutes. We’ve added spirulina powder for extra nutrition. You can easily replace the prawns for any white fish or if you want a vegan option, simply replace the fish or prawns with any vegetable. 

Ingredients:

1 (13.5oz) can unsweetened coconut milk

1 tablespoon fresh lime juice

1 tablespoon Thai green curry paste (you can use red too)

1 teaspoon honey

4 teaspoons minced peeled fresh ginger

2 garlic cloves, minced

1 teaspoon fish sauce

1 teaspoon spirulina powder (optional)

2 tablespoons chopped fresh coriander plus more for serving

2 tablespoons minced spring onions plus more for serving

4 6-oz raw prawns (or any other fish)

Brown basmati steamed rice for serving

Method:

Combine first 8 ingredients (coconut milk through spirulina) in a medium saucepan. Bring mixture to a boil and simmer until sauce thickens slightly, 8-9 minutes. Stir in coriander, spring onions and prawns. And cook for 1-2 minutes. Season sauce with salt and pepper and serve with rice.
